Homemade Zuppa Toscana


Ingredients:

1 lb Hot Pork/Italian Sausage
3 Medium-Large Potatoes (unpeeled)
1 Small Onion
3 Strips of Bacon
4 Cloves of Garlic
3 Cups of Kale (veins removed and sliced into thin ribbons)
32 oz Chicken Broth
2 1/2 Cups Water
1 1/4 Cups Half & Half

Directions:

Remove the casings from the sausage and brown the meat in a skillet, then put aside in a stock pot. Slice and brown bacon, then also add to the pot with the sausage. In the same pan you cooked the bacon, add the onion (thinly sliced) and cook in the bacon grease. Once translucent, add to the stock pot as well. For the potatoes: quarter them, then slice them into 1/4 in. triangles -- leaving the skin on. 

To the stock pot, add chicken broth, minced garlic, water, and potatoes -- let boil for 30 minutes, until the potatoes are tender. Then add Kale and half & half and let simmer for an additional 15 minutes, or until the kale is tender. Enjoy!
